Vegan Ginger Molasses Cookies

Friday’s Vegan Gourmet: These chewy, lightly sugar-coated cookies are a good source of iron, thanks to the molasses, and they help your kids learn to love ginger.

3/4 cup vegan margarine or shortening

1 cup sugar

Egg replacer, equal to two eggs, prepared to package directions

1/4 cup molasses

1 tsp. cinnamon

1 1/2 tsp. ground ginger

1/2 tsp. ground cloves

2 tsp. baking soda

2 cups unbleached, all-purpose flour

1. Preheat oven to 400 degrees

2. In a large bowl, and using an electric mixer on med-high speed, combine margarine and sugar for about two minutes until smooth.

3. Add all other ingredients except flour and mix again.

4. Add flour and fold the flour in with a wooden spoon or rubber scraper until combined.

5. Roll dough into balls (it will feel wet) about the size of a golf ball and roll in a bit of sugar in a bowl to lightly coat.

6. Plce cookies two inches apart on ungreased cookie sheet.

7. Bake 8-10 min.
